The Birth of Hibiki

Hibiki響It was released in 1989 to commemorate the 90th anniversary of Suntory's founding. The name means 'resonance' or 'echo'.
The person who led the planning was the 2nd Master Blender Saji Keizo (佐治敬三The name captures the state where people and nature harmonize, and the state where different essences overlap into a single sound.
The start is Hibiki 17 yearsIt was. Subsequently, with the addition of 21 years in 1994 and 30 years in 1997, a lineup centered on high aging was completed.
At that time, Suntory blended whiskyThere is a reason for challenging the pinnacle. Japanese whisky, like Scotland... Suntory KakuThis is because it was an industry built upon blends, led by [Name].
Japan's first whisky, 'Shirofuda,' released in 1929, was heavy and smoky, and the result was a failure. Founder Shinjiro Torii completely changed direction and went for a lighter style.
That is how Kakubin, released in 1937, captured the market. The conclusion was that what Japanese consumers wanted was not smokiness, but a smooth drink with flavor.
Blends reflect society. In the 1980s, 12.4 million cases of Suntory Old were sold annually in the Japanese domestic market alone. This figure is equivalent to the global sales volume of the entire Johnnie Walker lineup today.
Hibiki was a product designed to target the top tier of that massive blend market.
The results were successful. According to official Suntory data, Hibiki 21 Year and 30 Year were produced between 2007 and 2019. World Whisky AwardsIt has received the 'World's Best Blended Whisky' award more than 7 times.
Hibiki 21 went on to win the top prize, the 'Supreme Champion Spirit,' at the 2017 International Spirit Challenge. 30 won the same competition trophy five times between 2004 and 2023.
The three distilleries that make up Hibiki

To understand Hibiki, first this alcohol Yamazaki, Hakushu, Chita You should know that it is made using only the concentrate from three locations.
The reason why this is important becomes clear when compared to Scotland. In Scotland, there are over 100 malt distilleries, and a culture of exchanging spirits between companies was established a long time ago.
If a blender wants a specific flavor, they simply need to purchase the spirit from the distillery that produces it. This is why blends like Johnnie Walker or Ballantine's can use spirits from dozens of distilleries.
Japan is different. Suntory owns only two malt distilleries, Yamazaki and Hakushu, while Nikka owns only two, Yoichi and Miyagikyo. Furthermore, these two companies do not exchange raw spirits with each other.
It means that if a specific flavor is required, it must be created in-house rather than purchased from outside. This constraint gave rise to the unique approach of Japanese whisky: the extreme differentiation of styles within a single distillery.
Suntory and Nikka each handle over 100 styles of spirit. This is the result of combining the degree of peat treatment, yeast type, fermentation time, still type, condensation method, and cask type.
Let's address a point that is easy to misunderstand. The number of whisky distilleries in Japan has increased significantly. As of the mid-2020s... Over 50 producers and more than 100 distilleriesIt is in operation or under construction.
Starting with Chichibu, which opened in 2008, a large number of craft distilleries such as Akeshii, Kanosuke, Shizuoka, and Saburomaru emerged. As companies that produced shochu and awamori ventured into whiskey, styles also became more diverse.
However, the structure of self-sufficiency in raw spirit remains valid. The practice of major manufacturers not trading casks among themselves has not changed, and Hibiki is also made exclusively from raw spirits sourced from Suntory's three in-house distilleries.
Yamazaki

It is Japan's first whisky distillery, which began construction in 1923 and started operations in November 1924. It is responsible for the body and depth of Hibiki.
In Yamazaki, there are various sizes and shapes Pot SteelIt is available and combines various types of yeast with different casks. It is known that over 100 types of wort can be produced at this single location.
Since there are two mashed toons, the non-pit malt and heavy-pit malt are processed separately. The subtle smoky layer that underlies Hibiki comes from this.
Details about Yamazaki Whisky and the DistilleryLet's refer to this article.
Suntory clear wortwortThere is a chemical reason for insisting on it. The unsaturated fatty acids in the yeast cell membrane interfere with the activity of alcohol acetyltransferase, thereby inhibiting the production of acetic acid esters.
Clarifying the wort reduces the total amount of fatty acids, and as a result More fruit-scented esters are produced.. Hibiki's bright fruit tone is not a coincidence, but rather the result of design.
Hakushu

It is a distillery established in 1973 at the foot of Mount Kaikomagatake in the Southern Alps. Located within the grounds of a national park, it was once the world's largest malt distillery.
It still possesses over 450,000 casks. It is also evaluated as a more radical experimental facility than Yamazaki.
Four types of malt, ranging from non-peat to heavy-peat, are used, and the mixture of distilling yeast and brewing yeast is fermented for a long time in a wooden fermenter. The wooden fermenter and brewer's yeast induce lactic acid activity, which creates esters and a creamy texture.
Temperature conditions also differ. Hakushu ranges from 4 to 22 degrees year-round, while Yamazaki ranges from 10 to 27 degrees with high humidity in the summer. Consequently, even with raw spirits from the same company, the aging results are bound to differ.
What Hakushu puts into Hibiki is a refreshing green sensation like wet bamboo or moss after the rain, which is different in nature from Yamazaki.
cheetah

Established by Keizo Saji in 1972 on the Chita Peninsula in Aichi Prefecture Grain whisky It is a private distillery. Because it was relatively unknown, it was called the "Distillery of Silence.".
This place actually serves as Hibiki's hidden seasoning. The Suntory Blending Team uses Chita Grain in the dish againexitIt is likened to [something]. It is explained that it plays the role of binding the whole together as one without covering the materials.
It is also technically unique. The raw material is corn, and six-row barley malt with high saccharification power is used as an enzyme source.
After cooking the corn in a pressurized continuous steamer, the temperature is lowered to about 65 degrees, and malt dissolved in water is continuously fed in to saccharify it. The wort that is not filtered out at this stage is used directly for fermentation.
The Cheetah has four column steels. Depending on how many of these columns the grain passes through, completely different types of grain are produced.
| Type | Column pass count | personality | Role in the blend |
|---|---|---|---|
| Heavy | 2 | The fragrance component remains the most | Reinforcing weight and texture |
| Medium | 3 | Medium-intensity cereal sweetness | The connection between malt and grain |
| Clean | 4 | The lightest and cleanest | Brighten and organize the overall tone |
In any combination, the final distillation degree exceeds 941 TP3T. Because low-volatility components such as 2-methylbutanol and 3-methylbutanol are removed as fusel oil in the rectification section of the column still, the grain has much less congealing than the malt.
The method of producing three different styles from a single distillery is impressive, as it is rare even among grain distilleries.
Hibiki's Blending

In the industry, blenders are ‘Guardian of Whiskey’It is called [Name]. It manages all points that can affect the flavor, from the distillery, casks, maturation cellars, blend center, bottling, and distribution.
The first thing a blender does is group the liquid into categories. The primary classification is malt and grain, and the secondary classification is groups based on flavor profile.
By doing this, you can maintain your profile by selecting a substitute from the same category even if a specific concentrate is unavailable on the day of blending. The criteria for grouping vary from company to company and are not commonly shared information within the industry.
You shouldn't mistake grain for 'dilution.' Johnnie Walker's Master Blender, Jim Beveridge, [regarding] grain's deformation forceemphasizes.
The grain does not stop at adding its own flavor; it draws out new aromas from the malt included. This is exactly what Chita does in Hibiki.
Once blending is finished MaringmarryingThe process continues. The mixed concentrate is left to sit for a certain period to allow it to interact with each other.
It is not a legal obligation. However, results repeatedly show that both expert panels and general panels give higher scores to the side that has undergone matching.
The interesting point is that this interaction cannot yet be explained by chemical analysis. There still remains a realm in whiskey that is distinct to the senses but cannot be detected by instruments.
Suntory's fifth chief blender, Shinji Fukuyo, describes them as artisans rather than artists. This means they take responsibility not only for creating new things but also for maintaining quality.
Where and how will Hibiki mature?

Hibiki Japanese Harmony is Five casksWe use original liquid aged in [location]. Each caskThe roles are clearly divided.
The base is American white oak. The representative aroma components derived from oak are oak lactone and vanillin, which form the core of the whisky aging aroma.
Vanillin is naturally present in small amounts in wood, but, Heat treatment in the cask manufacturing processAs lignin breaks down, it increases rapidly. At this time, substances such as coniferylaldehyde and syringaldehyde are also produced.
These components increase up to about 200 degrees, and rise above that Charing When it enters the stage, it actually decreases due to volatilization and carbonization. However, Charing allows heat to penetrate up to 6mm deep into the wood, consequently increasing the extraction yield.
The sherry cask takes on a different layer. Hydrolyzable tannins come over along with spicy aromas, but tannins are not an aroma Taste and textureIt acts on the mouth. The bitter taste, astringent sensation, and the tightening sensation in the mouth come from here.
Here is one more card unique to Suntory. Plum wine casksall.
Suntory produces plum wine in-house and recycles the casks for aging whisky. It is a well-known fact that the sweet fruity tones of Hibiki 12-Year-Old come from this process. This is a type of cask not found in Scotland or Ireland.
The last one Mizunara, It is Japanese oak. It is explained that Suntory uses Mizunara because of its unique scent that evokes shrines and temples.
There is also a chemical basis. Oak lactones have cis and trans isomers, and the cis form is dominant in American oak, and Mizuna has a high proportion of trans types..
This resulted in the coconut aroma being more pronounced in Mizunara-aged whisky than in white oak-aged whisky during sensory evaluation. The same coconut-based aroma also appeared when trans lactone was artificially added to the whisky.
Oak lactone is not a component newly created by heat treatment, but is originally present in the wood. Therefore, even if you recharge a used Mizunara cask, the sensory characteristics of the first fill are not restored.
Herein lies the reason why Mizunara is precious.

A Complete Summary of the Hibiki Lineup

Hibiki started out as a highly aged lineup, but its composition has changed significantly now. This is because the raw spirit inventory could not withstand the surge in global demand.
The 12-year and 17-year versions were discontinued in 2015 and 2018, respectively. The discontinuation of the 17-year version was announced along with the Hakushu 12-year version, and its place was taken by the non-aged product, Japanese Harmony.
| product | launch | Composition features | circulation |
|---|---|---|---|
| Japanese Harmony | 2015 | Over 10 types of spirits, 5 casks, minimum 10-year-old spirits, 43% | Regular lineup |
| Harmony Masters Select | Late 2015 | A separate blend with a higher proportion of sherry casks | Duty-free shop exclusive |
| Blenders Choice | 2018 | Minimum 15-year-old spirit, used in wine casks | Exclusive to Japanese domestic restaurants |
| Blossom Harmony | 2021 | Cherry Cask Finish, Limited Annual | Limited release |
| Hibiki Year 12 | 2009 / 2026 Re-release | American, Spanish, Mizunara Oak Aged, 43% | Exclusive to global duty-free shops |

| 30 years of Hibiki | 1997 | Top-tier high-aged whisky, multiple international competition winners | rarity |
The composition of Japanese Harmony is organized into five strands: Chita grain, which plays a pivotal role; American white oak-aged malt; Sherry cask malt; Mizunara cask malt; and smoky malt that conceals its complexity.
Notable news is the return of Hibiki 12 Years. It made its debut at the Dubai International Airport duty-free shop in May 2026 and expanded to major airports starting June 1.
It is a new blend in which Shinji Fukuyo has reinterpreted the original concept, combining spirits aged in American oak, Spanish oak, and Mizunara oak. The recommended retail price for 700ml is approximately $188.
on the list of airports for sale Incheon AirportThis is included. It is being carried out alongside Singapore Changi, New York JFK, London, Hong Kong, Paris, etc.
Since it is a duty-free exclusive product not available through regular retail channels, it is worth checking out if you are planning to travel abroad.
In 2024, the 40th year of Hibiki was released. With a Japanese retail price of 6.6 million yen, it is essentially a collector's item.
Hibiki and the 24-sided bottle
Even those seeing Hibiki for the first time remember the shape of the bottle. The 24 facets, cut like jewels, serve as the brand's visual signature.
This number 24 refers to two things simultaneously. The Japanese traditional calendar system 24 solar terms, and it is 24 hours a day.
It is as if the cycle of the seasons and the cycle of the day have been layered into a single bottle. The concept of sealing the flow of nature and time within the liquor aligns with the brand's philosophy.
The label is Echizen WashiIt is a traditional Japanese handmade paper with a 1,500-year history, made by weaving plant fibers. In the Middle Ages, it was the paper used by the court nobility and samurai for official documents.
The label design was created by paper sculptor Eriko Horiki, and the character 響 on top is the work of calligrapher Tansetsu Ogino.
The purple color wrapping around the neck also has meaning. Kokimurasaki濃紫It is a color that only nobles could use in the past.
The 12-year plan for duty-free shops in 2026 added another layer here. Kacho Fugetsuflower bird moon, In other words, it incorporates the Japanese aesthetic concepts of flowers, birds, wind, and the moon into the packaging, and the Marumado, a round window in traditional architecture丸窓 I added a motif.
Hibiki price
The first problem people looking to buy Hibiki encounter is not the price, but the supply. It is common to see sold-out signs even at duty-free shops in Japanese international airports.
Let's start with the most accessible one, Japanese Harmony. The suggested retail price in Japan is 8,000 yen, but buying it at this price is virtually impossible.
As of July 2026, the price was in the 17,000 yen range at Haneda Duty Free. In Korea, as of 2025, it was over 100,000 won, and cases exceeding 250,000 won were confirmed through overseas direct purchase channels.
| product | Reference price range | note |
|---|---|---|
| Japanese Harmony | Domestic 100,000 won range~ | There is a large variation depending on the channel. |
| Harmony Masters Select | Duty-free in the low 100,000 won range | The supply is relatively abundant. |
| Blenders Choice | About 18,000 yen | When the downtown duty-free shop has stock |
| Hibiki Year 12 | About $188 | Recommended price for duty-free use |
| Hibiki 21 years | Recommended price 55,000 yen / Actual transaction 100,000 yen | It comes with a significant premium. |
| 30 years of Hibiki | 6 to 8 million won | It is practically whatever price is asked |
Prices fluctuate significantly depending on the time and channel. The figures above are for reference only, and it is safer to check real-time market prices before purchasing.
There is one more point to address. Established by the Japan Western Liquor Brewers Association in 2021 Japanese Whisky Labeling StandardsIt was fully implemented in 2024 following a three-year grace period.
To be labeled 'Japanese Whisky,' it must use water from Japan, be saccharified, fermented, and distilled within Japan, have a distilled spirit level of less than 951 TP3T, and be aged for at least 3 years in wooden casks within Japan.
Suntory has officially confirmed that all products for export meet this standard. Hibiki, which is made exclusively from spirits from three distilleries, has a structure that leaves no room for issues to begin with.
For reference, the final distillation alcohol content of the Chita exceeds 941 TP3T. This means it is designed to fall within the narrow range between that and the upper limit of the labeling standard, 951 TP3T.
It can be seen as the result of accurately calculating the balance point between lightness and regulation.
To summarize, Hibiki is a whisky that started from the constraint of having to source all the raw spirits from three distilleries in-house, and instead transformed that constraint into a design language.
Just as the 24 facets engraved on the bottle point to the cycle of the seasons, the liquor inside is a resonance created by the overlapping of raw spirits of different characteristics. It is not an exaggeration to say that this liquor lives up to its name.
